Mediterranean chickpea salad is a bowl of tender chickpeas, crisp raw vegetables, olives and plenty of fresh herbs, brought together with lemon and olive oil. Versions of it turn up around the eastern Mediterranean and in Turkish home cooking, usually as part of a meze spread, a packed lunch or a side for grilled vegetables.

This version starts with dried chickpeas, soaked in the refrigerator and simmered until creamy but intact. The warm chickpeas go into the dressing first, so they absorb the lemon, garlic and oil instead of just being coated by it. The cucumber, tomato, pepper, onion and herbs are folded in at the end to stay crisp and bright. The dressing is lightly salted because the olives and the optional feta add salt of their own.

Plan ahead: the chickpeas need an 8 to 12 hour cold soak in the refrigerator. After the soak, the recipe takes about 2 hours, most of it unattended simmering. Older chickpeas or hard water can add 15 to 45 minutes, so judge doneness by texture, not the clock. Serve it as a light main with warm flatbread, or as a side next to falafel, grilled halloumi or roasted eggplant. It improves after a short rest, so it suits making ahead.

Preparation

  1. Step 01480 min

Put the dried chickpeas in a large bowl and cover with the 800 g cold water. Cover the bowl and refrigerate at 4 C / 40 F for 8 to 12 hours. Do not soak at room temperature.

  2. Step 022 min

Drain the soaked chickpeas into a colander, discard the soaking water and rinse the chickpeas well under cold running water. They should look plump and about double in size.

  3. Step 0310 min

Tip the chickpeas into a medium saucepan with the 1200 g fresh water. Bring to a boil over high heat, skimming off any foam that rises.

  4. Step 0470 min

Reduce the heat to low so the water barely bubbles, about 95 C / 203 F. Partly cover and simmer for 60 to 75 minutes. Top up with hot water whenever the level drops below the chickpeas.

  5. Step 0515 min

Test a chickpea at 60 minutes and again every 10 minutes. They are done when one mashes easily between your fingers and the center is creamy with no chalky or firm core. If the centers are still firm or chalky at 75 minutes, keep simmering gently, topping up with hot water, and keep checking. Older chickpeas or hard water can need up to 90 minutes, and occasionally up to 120 minutes. Rely on the finger-mash test rather than the clock.

  6. Step 0615 min

While the chickpeas simmer, whisk the olive oil, lemon juice, vinegar, garlic, oregano, sumac if using, 1.5 g salt and the pepper in a large mixing bowl until slightly thickened. Prepare the vegetables and herbs now too, and keep them in the refrigerator until needed.

  7. Step 0710 min

Drain the cooked chickpeas well, shaking off excess water. Add them to the dressing while still warm and fold gently. Leave for 10 minutes so they absorb the dressing.

  8. Step 083 min

Add the cucumber, tomatoes, red pepper, red onion and olives to the bowl. Fold gently so the chickpeas stay whole.

  9. Step 092 min

Taste and add a small pinch of salt, up to 0.5 g, only if needed. Fold in the parsley and mint. Scatter the feta over the top if using.

  10. Step 1015 min

Rest the salad for 15 minutes at room temperature so the flavors blend, then serve. If it will not be eaten within 2 hours of the chickpeas coming off the heat, refrigerate it at 4 C / 40 F before that point.

Kitchen notes

  • Timing: the total time of about 10 hours includes the minimum 8 hour cold soak. After the soak, allow about 2 hours, with roughly 40 minutes of hands-on work. Old chickpeas or hard water can add up to 45 minutes of simmering, or more in rare cases.
  • Chickpeas still firm: if the centers are chalky when the time is up, keep simmering gently with enough hot water to cover, and check every 10 minutes. Do not drain and dress them until they mash easily.
  • Storage: refrigerate in an airtight container for up to 3 days at 4 C / 40 F. Within 2 hours of cooking, get leftovers into the fridge. The cucumber and tomatoes release liquid over time, so stir and taste before serving.
  • Make ahead: cook the chickpeas and mix the dressing up to 2 days ahead, and refrigerate them together. Add the vegetables, herbs and feta shortly before serving for the best crunch.
  • Canned chickpeas: use about 480 g drained and rinsed canned chickpeas in place of the dried chickpeas and skip the soaking and simmering steps. Warm them briefly in a pan or microwave before dressing. Canned chickpeas may carry salt, so taste before adding any extra.
  • Variations: add a pinch of Aleppo pepper or chili flakes, a handful of toasted pine nuts, or a spoonful of tahini whisked into the dressing. Leave out the feta to keep it vegan.
  • Allergens: feta contains milk, and it may be made with animal rennet unless the label says microbial or vegetable rennet. Check labels on jarred olives for additives.

Frequently asked questions

Why dress the chickpeas while they are warm?

Warm chickpeas absorb the lemon, garlic and olive oil more readily than cold ones, so the flavor goes through the chickpeas instead of sitting on the surface.

Can I use canned chickpeas instead of dried?

Yes. Use about 480 g drained and rinsed canned chickpeas and skip the soaking and simmering. The texture will be slightly firmer, and the salad will still work well.

Why soak the chickpeas in the refrigerator?

Soaking at 4 C / 40 F keeps the chickpeas cold the whole time, which avoids the souring or fermenting that can happen when they sit in water at room temperature.

My chickpeas are still hard after 75 minutes. What should I do?

Keep simmering gently and add hot water so they stay covered. Older chickpeas or hard water can need 90 minutes or even up to 120 minutes. They are ready when one mashes easily between your fingers with no chalky center.

How long does the salad keep?

It keeps for up to 3 days in an airtight container in the refrigerator. The vegetables soften gradually, so it is crispest on the first day.
